Medium-Dark roast

The basic roast process is to heat the green coffee beans in a controlled manner. The amount of heat you put into the beans and the time at a specific temperature changes the ultimate flavor profile of the roasted coffee.

The roaster we use allows us to program the temperature and time of the roast. It also records the actual temp and time during the roast.

The desired temp vs time curve is what we call the “PROFILE”. We develop this profile thru testing and analysis, cupping, and just plain trying the coffee, as well as extensive feedback from our customers. Just like optimizing race cars, we constantly use the data and personal feedback to slightly adjust the roast profile for environmental conditions. Also, just like a race track that changes with time and weather, coffee beans we source from around the world change with humidity, vintage, and local weather conditions.

This data trace is specific to the coffee in the bag you get and only that bag. It allows us to see the target profile (in black) and the actual roast trace (in red).

There are many ways to change the flavor by adjusting the profile. For example, some people roast longer at a higher temp to make a darker roast. We find that results in a burnt flavor. What we do is change the profile to lower the rate of rise and “flatten” out the curve. This gives a bolder flavor without being burnt.
