Coffee roasting is NOT our real job, lets get that out of the way first. We engineer race cars for a living. This means we are in charge of winning car races around the world at places like Daytona, Le Mans, Sebring, Watkins Glen, Long Beach, etc.
Having engineered cars for 40+ years we have developed procedures and systems that help us apply data acquisition and analysis which allow us to make informed decisions on changes in set up and design of the cars to improve their performance.
A few years ago we became interested in coffee roasting to produce better tasting espresso and coffee from the high end equipment we were playing with in the office. It became obvious that application of some of the procedures and systems we used to make cars go faster could be applied to coffee roasting to produce a better cup of espresso and coffee.
Using a roaster outfitted with a data acquisition system as well as a post roast color analyzer and a refractometer we “engineer” our coffee to produce repeatable, consistent, great tasting coffee.
Like racing, and any competition, we strive to improve every race, or every batch of coffee . We only roast 1 pound at a time. Each customer gets a batch roasted only for them. That specific batch is controlled to follow the exact roast “profile” we program into the roaster. The data system records the temperature vs time data and a print out, like the sample below.

The racing business takes us away from the world headquarters often so the roasting schedule is not certain. We always roast when we are home but you may have to wait at times. Please check the home page top banner for the current roast schedule.
You can order any time but please understand that we can only roast and ship after we get back from a race or test.
We always ship our coffee within 1 day of roasting. The key is fresh coffee to you. We NEVER have roasted coffee sitting waiting to ship. You order and we go out and roast your individual batch just for you, not mixed with any other order.
